We’re starting to see some amazing summer fruit in our local supermarket – here are a couple ideas for preserving it while it’s still good!

  • iTunes Podcast App IconLook for the iPhone’s default “Podcasts App”. It may already be there, or you may need to download it. It looks like this:

In today’s Episode…

We’re celebrating the beginning of summer! The fruit in our supermarket is ripe and delicious, but unfortunately this season won’t last forever. Today we’re talking about different ways you can buy today’s delicious fruit and preserve it to use throughout the fall and winter.

Flavored Syrups

This is a great, simple way to get the flavor of fruit and keep using it well into the winter. Check out our post “What’s the Best Way to Infuse Simple Syrup to see an experiment comparing some of the methods below!

  • Maceration: This is when you chop up fruit and sprinkle sugar on top, then wait. The sugar causes the fruit to release a syrup which can be used instead of Simple syrup in cocktails. We used this technique in our Melon Ball and Prickly Swizzle cocktails.
  • Stove top Syrup: Chopping up the fruit and simmering on the stove top with sugar will also make a great syrup with more of a jammy, “cooked” fruit flavor. I tend to like this type of syrup with darker spirits like bourbon or aged rum.
  • A Juicer: Perhaps the most obvious option, if you have a juicer you can certainly just juice the fruit and add sugar to make a syrup. I’ll warn you, it’s just about impossible to use a juicer without making a mess!  The resulting syrup is more “fresh” flavored, and preserves acidity well.

Infusions

Alcohol is also a great preservative, and infusing alcohol with fruit is another good way to save that great flavor for later. For the step by step process check out our Before and After infusion posts!

Shrubs

Far less common than syrups and infusions, shrubs are actually a very old method of preserving fruit by using vinegar – yep, another preservative. Shrubs are also called “Drinking vinegars” and we have a video on how to make them here. (By the way, here’s the High Hat Bar we mentioned in New Orleans – when we visited they had an amazing mushroom shrub. Its so good!)
